Italian-Style Escargot in Tomato Sauce

Snails have been a delicacy in many cultures for centuries, and their popularity in gourmet cuisine continues to grow. Today, we're excited to share a fail-proof recipe that will introduce you to the wonderful world of snail gastronomy.

This recipe, inspired by traditional Italian cuisine, offers a delightful twist on the classic French preparation of escargot.

Italian-Style Escargot in Tomato Sauce

This recipe, inspired by traditional Italian cuisine, offers a delightful twist on the classic French preparation of escargot.

Ingredients:

  • 1.5 kg cleaned and pre-cooked snails

  • 1/2 large onion, finely chopped

  • 4 cloves of garlic, minced

  • 6 tbsp olive oil

  • 2 tbsp tomato paste

  • 1 can (400g) crushed tomatoes

  • 1 bottle (400g) tomato puree

  • 1/4 cup shredded mozzarella cheese

  • 1/2 cup water

  • Fresh herbs: sage, rosemary, thyme, marjoram, wild fennel fronds

  • Salt and black pepper to taste

  • 3 tbsp bread crumbs

  • 2 anchovies (optional)

Instructions:

1. In a large pan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautΓ©ing until translucent.

2. Add the fresh herbs and cook for another minute until fragrant.

3. Add the snails to the pan and stir to combine with the aromatics.

4. Once the snails start to sizzle, add the tomato paste, crushed tomatoes, and tomato puree. Stir well.

5. Add water, salt, cheese, and pepper. Simmer on low heat for about 30 minutes, stirring occasionally.

6. If using, add the anchovies and bread crumbs in the last 5 minutes of cooking.

7. Serve hot with crusty bread to soak up the delicious sauce.
